Olive and Sardinian cheese plumcake

Molino Soncini Cesare stone-milled type-1 Strong First flour150g
grated pecorino cheese40g
sunflower oil50ml
Sardinian cheese150g
Green pitted Ficacci Olives with pepper filling50g
instant yeast1 sachet
salt and pepperto taste

Ingredients for the filling/topping


Place your flour, grated pecorino, eggs, oil, milk, salt and pepper in a deep pot; mix well together, and then add small pieces of you Sardinian cheese, plus the green olives and finally the yeast. Work well together and pour into a 21-cm floured and buttered plumcake baking tray. Bake at 180°C for 45 minutes. Leave to cool completely before serving.
