Strudel muffins

Ingredients for the filling/topping

200g type-00 flour, 120ml sunflower oil, 1/2 sachet of cake yeast, 100ml milk, jar of Happy Mama Strudel jam, icing sugar (as needed)


Whisk the eggs together with the sugar, until they become white and frothy. Add the sifted type-00 flour, continue to whisk and then add the oil, the Cake flour and the milk. Mix well together, and then pour into muffin baking moulds, filling them only halfway. Then add two heaped teaspoons of the Happy Mama Strudel mix, and cover with one more tablespoon of the dough mix. Bake at 170°C for 15-20 minutes: once cooked, remove from the oven, leave to cool and serve with a dusting of icing sugar.
