Kamut Oatmeal Cookies

Ingredients
Molino Soncini Cesare Semi-processed Kamut flour mix100g
baking powder½ teaspoon
baking soda½ teaspoon
salt¼ teaspoon
brown sugar175g
melted butter115g
egg1
vanilla1.5 teaspoons

Ingredients for the filling/topping

75g chocolate chips, 75g walnuts, 150g finely ground rolled oats, 150g rolled oats

Recipe:

Pre-heat oven to 190°C. In a large bowl whisk the egg, melted butter (or oil), sugar, and vanilla. In a separate bowl blend together the kamut flour, ground oats, regular oats, baking powder, baking soda and salt. Add dry ingredients to the butter mix, stir well, and add the chocolate and walnut pieces.
Drop heaped tablespoons of dough onto a greased baking sheet, flattening each slightly. Bake for 8-11 minutes. Allow to cool before serving.
